A Refreshing Quinoa Salad

Very nutritious and refreshing salad ideal to consume on hot summer days. Cucumber is a healthy food because of its richness in water, vitamins and minerals.
QUINOA SALAD
Ingredients:
- 2 cups of water
- 1 cup quinoa
- 1 small shallot finely chopped (or half an onion)
- 3 tablespoons vinegar
- 1/2 teaspoon ground red pepper or paprika
- Extra virgin olive oil (1/4 cup, or to taste)
- 1 or 2 thinly sliced cucumbers
- Fresh chopped parsley
- Sea salt
Preparation:
- Cook the quinoa with a 1 teaspoon of salt and boil in a saucepan over low heat until the grain is tender and the water has been absorbed, about 15 minutes.
- Let it cool.
- Mix the chopped shallot, vinegar and ground red pepper in a small bowl. Incorporate virgin olive oil little by little removing until it emulsifies.
- Place the quinoa in a large serving bowl and add the chopped cucumber, parsley and freshly made vinaigrette.
- Season with salt.
