A Refreshing Quinoa Salad

It certainly has a well-deserved reputation, because of the quinoa we would dare to say that it is not only a superfood, but “the superfood”, since, as you will see, it is one of the most complete foods that exist, and It is difficult to find a defect.

Very nutritious and refreshing salad ideal to consume on hot summer days. Cucumber is a healthy food because of its richness in water, vitamins and minerals.

QUINOA SALAD

Ingredients:

  • 2 cups of water
  • 1 cup quinoa
  • 1 small shallot finely chopped (or half an onion)
  • 3 tablespoons vinegar
  • 1/2 teaspoon ground red pepper or paprika
  • Extra virgin olive oil (1/4 cup, or to taste)
  • 1 or 2 thinly sliced cucumbers
  • Fresh chopped parsley
  • Sea salt

Preparation:

  1. Cook the quinoa with a 1 teaspoon of salt and boil in a saucepan over low heat until the grain is tender and the water has been absorbed, about 15 minutes.
  2. Let it cool.
  3. Mix the chopped shallot, vinegar and ground red pepper in a small bowl. Incorporate virgin olive oil little by little removing until it emulsifies.
  4. Place the quinoa in a large serving bowl and add the chopped cucumber, parsley and freshly made vinaigrette.
  5. Season with salt.
